CLASSIFICATION: Key Employee

 

SUMMARY:

Oversees the operation of all kitchen areas, including but not limited to, receiving, supplies, recipes and quality preparation of all food items.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following (other duties may be assigned):

  • Responsible for overall kitchen operations.
  • Assists F&B Director in all food outlets.
  • Maintains budgeted food cost and labor cost.
  • Reviews all daily & weekly forecasts to plan and prepare accordingly.
  • Assists with the development of all menus.
  • Maintains excellent food quality.
  • Utilizes the purchasing system and/or approved vendors for food items and kitchenware purchases.
  • Follow up on guest complaints.
  • Assures F&B areas are maintained in accordance with company standards, as well as, all applicable regulations.
  • Oversees the hiring, training and evaluation of all kitchen team members.
  • Oversees food deliveries.
  • Responsible for food for all special events.
  • Insures kitchen equipment is maintained to SOP standards.
  • Maintains a high visibility conducting outlet inspections daily.
  • May be assigned to Food & Beverage work stations of the casino and/or hotel.

  • Other management systems
  • HR files (in presence of HR personnel)

 

SIGNATORY ABILITY:

  • Accounting related forms.
  • HR related forms.
  • Complimentary vouchers as allowed per comp matrix.

 

MINIMUM QUALIFICATION REQUIREMENTS:

  • High School Diploma or GED.
  • Culinary arts degree preferred and college degree preferred.
  • Minimum six (6) years of experience in high-volume kitchen positions with three (3) years of experience as Sous Chef or Chef, including but not limited to purchasing, training, menu and dietary planning and administration.
  • Possess a working knowledge of Microsoft Word and Excel.
  • To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.

PHYSICAL DEMANDS:

  • To perform this job successfully, the individual must be able to stand, move and work throughout the office area and properties, including walking up to 1 mile, climbing stairs and sitting at a desk/work station for the duration of the shift.
  • Also may be subjected to a smoke-filled environment.
  • The noise level in the work environment is usually moderate, but will escalate when located in the casino environment.
  • Must be able to grasp, bend, lift and/or carry or otherwise move goods weighing a minimum of 25 lbs. on an intermittent basis, and sufficient dexterity of hand in order to use office equipment including, but not limited to: a computer keyboard, calculator, general office equipment and multi-line telephone.
